Clean eating Quinoa Chicken and Red Beans


Quick healthy kid approved dinner!

You will need:
1 rotisserie chicken
2 garlic cloves crushed
1 T olive oil
1 can of black or red beans
2 cups quinoa well rinsed
1 can tomato sauce
1/2 onion
1 packet sazon (in hispanic section of groceery)
dash of Adobo
1 can diced tomatoes
chopped scallions and greek yogurt for serving

Saute chopped onions in a bit of olive oil for 2 min in a large skillet. Add packet of Sazon and crushed garlic. Saute 2 min more. Add can of beans and can of diced tomatoes. Simmer. Meanwhile cook quinoa according to directions on the bag in a separate pot. Shred chicken and add to simmering onion and bean mixture. Drain quinoa and add skillet mixture to quinoa in the empty pot. Add one can of tomatoe sauce. Heat through another 10 min on low. 

Serve with scallions and a dollop of greek yogurt as a healthy alternative to sour cream. shredded cheddar and avocado is also wonderful additions!
